The Lost In Ibiza boat party captain takes us to Thailand and back…
A record that always reminds you of Ibiza
Frankie Knuckles – Your Love
Your perfect breakfast would be…
For me nothing can top a good old fashioned hearty English fry up, Cumberlands, poached eggs and hash browns need to be on the plate somewhere…
The most unusual thing I have ever eaten…
It would have to be dog! I was duped into eating it when I was visiting a small village in the far north of Thailand. It tasted like badly cooked pork and due to my huge love for dogs, it will haunt me till my dying day!
The dish that reminds me of my childhood
Fish fingers, chips and beans!
Who taught you to cook?
I was self taught as I have lived alone since my teens. That would probably explain why I’m a disaster in the kitchen.
Your favourite 3 restaurants in Thailand?
Tough to answer that one as there are so many amazing restaurants here.
I would say probably Fishermans Restuarant in Koh Phangan (check their crab below).
Srithanu Kitchen also in Koh Phangan.
Dr Frogs on Koh Samui (below)
Your favourite Thai dish?
Another really tough one as there as so many dishes out here which I love so much. It would probably be Pad Siew Seng Leung as that’s what I seem to order the most! It’s a stir fried dish with yellow noodles, kale, morning glory, baby sweetcorns and chicken in an oyster sauce.
A DJ that has surprised you with their cooking skills…what did they cook?
Strangley I can only remember two DJs having ever cooked for me!! They are local DJs here in Thailand and good friends of mine, Rob Gritton and Rory Gallagher…Rob cooks a mean Spag Bol…other than that, Jamie Jones made me some awesome mint tea at his villa before, now I’m addicted to it! Not sure if hot liquid counts though?
Your guilty pleasure food. You know you shouldn’t but you always do…
I’m really partial to the cheese and ham toasties they have in 7-11’s out here! They are divine, but you know with every bite they are chipping away at your health with their processed ingredients running riot in your blood stream. Could destroy one right now to be honest!
What is your signature dish
Would have to be Thai green curry as that’s the only thing I can cook without welding it to the pan and poisoning myself…
If you could have a master-class with a celebrity chef, who’d you pick and why?
Chef McDang from Thailand. With his knowledge of the intense flavour combinations found in Thai food along with his superb skills in the kitchen, it would really be interesting.
Dead or alive – 3 people from history/celebrities you would invite around for dinner…
Salvador Dhali // Karl Pilkington // Terrance McKenna
A dish you have yet to master…
Tom Yum Goong is the one I always try to cook but can never get those bold flavours correct the way the Thai people do it, always one flavour standing out too much rather than a perfect balance!
Your favourite pizza topping
Egg & Spinach…Fiorentina style!
Your biggest ever food cock up
Pretty much anything I attempt to cook is a disaster. It’s usually dishes where I have to think about more than 2 things at a time. Something always gets burnt!
A dish you just cannot stomach
Anything with liver in. Other than that I can eat anything the world has to offer!
My favourite 3 restaurants on the island…
La Dolce Vite // Villa Mercades // Es Cuco
The best sunset spot for a cold drink…
Your favourite Ibiza dish
Half Chicken at Es Cuco!
The perfect 24 hours in Ibiza would be…
Boat Party on the Lost In Ibiza boat followed by a night and morning at Paradise DC10
