k  Roasted Beetroot  k

k  (for the salad nicoise)  k


10 beetroot peeled and cut into 1/4

1 teaspoon Maldon salt

2 tablespoons extra virgin olive oil

1 tablespoon  balsamic vinegar

Juice of 1 orange

1 tablespoon maple syrup or honey


Preheat the oven to 200 degrees.

Line a baking sheet with aluminum foil and place beetroots, toss with the all the ingredients listed.

Roast for until the beets are tender when 35 to 40 minutes (turn once midway through cooking)
