k  Quick pickled red onion  k

k  For the falafel and salads  k

Ingredients (serves approx 20)

6 large red onion very thinly sliced

4 teaspoons fine salt

400ml white wine

100g sugar

1 teaspoon coarsely ground black pepper

100ml water


Put the onions in a colander placed over a bowl and sprinkle with salt and set aside for an hour to brine.

Meanwhile put the vinegar, water, pepper and the sugar in a saucepan. Bring to a simmer, for a couple of minutes. Pour over the onions in a jar.
