k  Pikes Posh Grilled Cheese (Mediterranean rarebit)    k


(6 portions ) 

250g Manchego cheese, grated

250g cheddar cheese

2 egg, lightly beaten

4 tablespoons milk

2 teaspoons Worcestershire sauce

2 teaspoons English mustard

2 black garlic cloves

Pinch of cayenne pepper 

1 tablespoon chopped chives

Serve with 

Roasted tomatoes 

Nasturtium leaves (if none, use watercress instead)

Truffle honey 

6 thick slices sourdough bread


Preheat the grill to high and toast the bread on both sides. 

Mix the grated cheese(s) with the egg, milk, Worcestershire sauce, mustard and cayenne.

Spread the cheese mixture on top of the toast. Grill until the cheese is melted and starting to turn golden brown. 

Serve immediately garnished with nasturtium leaves, roast tomatoes and truffle honey
