k  Papaya filled with yoghurt granola, blueberries, banana & chia seeds  k

This is a gorgeous breakfast recipe, it tastes luxurious and indulgent but it is actually a healthy option. One half is big enough to feed two people making it a sexy little sharing dish that is great for weekends or a lazy brunch – and only two spoons required!

It’s incredibly easy to make – papaya, which seems to be super sized in Ibiza is deliciously sweet with musky undertones and a soft butter-like consistency. Papayas offer not only wonderful taste and the sunlit hue of the tropics, they are a rich source of antioxidants and nutrients such as carotenes, vitamin C, B vitamins, folate, pantothenic acid, potassium, copper, magnesium and fantastic source of fibre along with anti-inflammatory immune boosting effects. Need I say more?
You can fill the papaya with anything you fancy – for a breakfast option I’ve used blueberries, bananas, crunchy granola, greek yogurt a drizzle of honey and a sprinkling of chia seeds (for an extra health kick). For a lunch idea you can play around with savoury ingredients too, like rice noodles and thai chicken or with Iberico ham, burrata and basil pesto…very super yum.

INGREDIENTS

Serves 2 – 4 (one half easily serves 2)

1 large and ripe papaya
2 cartons plain greek yogurt (or coconut yoghurt)
1 punnet blueberries
2 bananas
2 handfuls of granola (preferably homemade)
raw organic honey
chia seeds

METHOD

1. Slice papaya in half lengthwise, spoon out seeds and scrape away just enough flesh to create a small well.
2. Fill each side with yogurt and granola. Carefully place the sliced banana and blueberries on top. Drizzle with raw honey and a sprinkling of chia seeds. Easy!
