k  Coconut Chia Pudding  k

k  with exotic and seasonal fruits  k


(Makes 10-12 portions. Shelf life 4 days)

150g organic chia

1 tablespoon maca powder

750ml unsweetened coconut milk

3 tablespoon pure maple syrup

3 teaspoon pure vanilla extract

1 teaspoon drops of natural almond extract


2 mango – diced 2cm square

1 pomegranate

2 passion fruit

And any seasonal fruits

Pistachio with nut croconti


1.Slowly whisk 1/4 coconut milk into the chia seeds, and leave for 5 minutes to thicken up. Add all the remaining milk, pure maple syrup, vanilla extract, and whisk thoroughly.

2.Place in the fridge to set, it can be ready to go in just about 30 minutes but you could leave it overnight if you want (for thicker and softer texture)

3.Top with the chopped fruit and sprinkle with the nuts
