k  Chocolate Pistachio dipped figs  k

To eat figs off the tree in the very early morning, when they have been barely touched by the sun, is one of the exquisite pleasures of the Mediterranean”
― Elizabeth David, from her novel ‘An omelette and a glass of wine’.

…but when you dip them in dark chocolate and sprinkle them with pistachios and get the most heavenly consistency: sticky, chewy, little a crunch on the outside…just prepare yourself for an oral orgasm!

Ingredients

6 fresh figs

1 teaspoon coconut oil

100g piece organic chocolate (over 85%)

Orange extract & orange blossom (optional)

2 tablespoons pistachio pieces (or nuts of your choice)

Method

Slice the figs into three slices. Fill a medium saucepan with with a few inches of water and place over a glass bowl on top of the pan and bring the water to a slow simmer

As the chocolate melts add the coconut oil and orange extract, stir frequently and as soon as the chocolate melts, remove the bowl from the heat.

Dip the figs in melted chocolate as much or as little as you want – I like to leave a little bit of the tops of the figs exposed

Put the chocolate-covered figs on to a baking sheet and immediately sprinkle with crushed pistachios. Leave to set, serve and be dazzled by how good they are!
