The deep house don from Berlin delves into his menu from around the world
A record that always reminds you of Ibiza
Agoria – Les Violons Ivres
Your perfect breakfast would be…
In bed around noon when it is snowing outside. Around my bed should be everything you need to create great tasty healthy veggie burgers; avocados, tomatoes, lamb’s lettuce, arugula, pickles, bavarian sweet mustard, gourmet remoulade and fresh basil. Also a self made fruit salad would be great, but to make it perfect I should not be the one who made it. A cappucino and sparkling water or fresh pressed orange juice to drink. Perfect.
The most unusual thing I have ever eaten…
I guess you don’t mean the chemicals, hormones and all the new synthetic flavors in our every day food. So a weird experience I had in Colombia. The promoter offered me something like meat powder and fried bones, so I ate 3 avocados with bananas which were meant to be decoration. In Paris I tried caviar once. It was not as bad as I thought, but I would not eat it again. I tried calamari once. Just disgusting.
The dish that reminds me of my childhood
All Italian food. I didn’t grow up in Italy and also none of my relatives are Italian, but our food was Italian only. Spaghetti with tomatoes and garlic. Yeah…
Who taught you to cook?
Nobody. I tried it a lot and mostly the results were delicious, sometimes not. That made me learn how to not do it. But I cannot cook a special classic food. I am very good in improvising with the forgotten vegetables from the fridge.
Your favourite 3 restaurants in your home town/city
Berlin has thousands of great restaurants. I love Vietnamese Village because it is really close from my place and the veggie curry is one of the best in town.
Also Zweistrom which is an unbelievable Lebanese fast food restaurant, but it doesn’t taste like fast food. Also it is not fatty there which is a bonus.
Some of the other restaurants from around the world you love…
Also difficult. I loved the salads in Mykonos but I cannot remember the name of the restaurant. The salads in Greece are always unbelievable tasty. I had some great pasta squares filled with walnut and cheese topped with pears and cream sauce (below) in Ravensburg in south west Germany. But don’t ask me for the name of the restaurant! The sushi places in Vancouver. Pizza in the Dolomiti Mountains. Mexican food in Mexico City is what I also would die for. Difficult to find it without meat but if you find it you’ll gonna die of happiness.
A DJ or musician that has surprised you with their cooking skills…what did they cook
A promoter from Dortmund was cooking some delicious Lebanese food with this recipe from his mum. I guess he heard that Lebanese food is my absolutely favourite. It was really good though…
Your guilty pleasure food. You know you shouldn’t but you always do…
Pizza, pasta, Halloumi Cheese, Mexican Burrito…
What is your signature dish?
Pasta with a tomato, sweet red pepper cream sauce like we did it at my parents house. Or zucchini in tomato with yogurt sauce (below) when I am on a healthy trip or diet vision. Also I am a master of the salad dressing.
Dead or alive – 3 famous people you would invite around for dinner…
Mick Jagger, Thom Yorke and Albert Einstein.
A dish you have yet to master…
Green curry with coconut milk, coriander, lemon grass, peanuts and vegetables. One of my favourite dishes but I’ve never made it to taste as delicious as in the restaurants.
Your favourite pizza topping
Tomato sauce, buffalo mozzarella, extra fresh tomato slices, extra garlic, artichokes, black olives and basil…
Your biggest ever food cock up
I invited some friends from New York to my house in Berlin and suddenly they show up with all their other Berlin friends so we were about 15 people at a 8 people dining table. I had to borrow plates from the neighbors. Or maybe the lentil soup I prepared for a music video shoot for 18 people.
A dish you just cannot stomach
Fish and seafood in general. Too much milk would be a problem as well and some kinds of alcohol. Over the years my body has become allergic to vodka, so I became good friends with whiskey.
You get in from the club pissed, dive in the fridge and usually come out with…?
Nothing. And then I am really pissed.
The most expensive meal you have ever had?
The problem is that I am always invited by the promoters for dinner when I am at the really crazy restaurants in Paris or Switzerland. So I don’t know. But I normally order the cheapest because I prefer salad or pasta to fancy expensive things.
The most disgusting thing you have ever eaten at a festival
A beer in a can in which somebody put his cigarette. Normally I don’t eat at festivals. The bigger ones usually have buffets which are actually not that bad.
The last time you used a cook book for a meal…
Last month for Christmas.
Ibiza…
…seems to be tasty!
My favourite restaurants on the island…
I really love The Skinny Kitchen in San Antonio.
And also Le Bar in Ibiza Town. At Le Bar you can have the freshest juices and best vegetarian food on the island, in my opinion.
I also love Passion by the casino in Marina Bottafoch.
The best sunset spot for a cold drink…
Benirras for sure! When the bongo guys are there on Sundays and create a unique vibe? Total goosebumps.
Your favourite Ibiza dish
Hierbas, what else?
The perfect 24 hours in Ibiza would be…
Sleeping long, breakfast with good friends. swimming and then going straight to a nice dinner outside with a view to the sea. A good bar place with some good friends and some new people to get to know. Playing an easy but crowded live gig, afterhours at the beach. Another afterhour at another beach. Then sleeping in a cosy stylish house made of wood somewhere in the mountains….
