k  Slow Roasted Tomatoes  k

k  (For the cheese toast & sweetcorn fritters)   k

Ingredients

20 vine tomatoes cut into 1/4

1 tablespoon dried garlic

1 tablespoon dried thyme

1/2 tablespoon sugar

2 teaspoons maldon salt

3 tablespoons olive oil

Method

Heat oven to 140C fan. Put the tomatoes on a baking sheet with the garlic and thyme, salt, sugar and drizzle over olive oil. Roast 45 minutes to 1 hour, remove and set aside to cool.
