La Paloma in San Lorenzo. Love this place food is really healthy and great relaxed setting

Pig&Dan – Destination Unkown Yes I know its on my label but I was on holiday in Ibiza last year for 10 days and had this on repeat just before we released it. Such a perfect chilled album for those long summer days.

Away from the club…the perfect 24 hours in Ibiza would be…

Wake up when I wake up, light breakfast/ lunch, relax by the pool, read a book, after sunset head out for a nice meal and an early night…and try and repeat this for at least four nights in a row.

You have travelled all over the world, what is the most unusual food you have ever tried?

Stinky Tofu in Shanghai. It’s a delicacy over there but I was not feeling at all, It lived up to its name for sure.

Your guilty pleasure food?

Fish and Chips – they taste great at the time then you feel full of grease 30 mins later (not had them for ages )

Your favourite restaurants in the UK?

Scotts is unbeatable when it comes to fish.

This is a hard one I don’t get to them that often so I need a few to mention…

If you could have a masterclass with any master chef…who would it be and why?

Gavin Baker who runs The Mist Project (www.themistproject.com), I had the pleasure of meeting him in Australia last year at one of his projects and I love his take on creating a Guerrilla Restaurant in various food cultures around the world and interpreting traditional foods in a modern way. His passion for what he does is incredible.

What countries do you love returning to, to sample their cuisine?

Japan hands down every time its the best.

A dish you just cannot stomach?

Anything with marzipan in it and eggs and bacon ice cream.

The best airline food – if any!

I try and eat before I fly if I can but if i am on long haul airlines like Japan Airways, Emirates and Singapore are very good BA is a lot better these days also.
