A perfect 24 hours in Ibiza would be…

Just couldn’t be a perfect 24 hours as it takes me 3 days to unwind and get into the pace of the island. However on arrival, straight to a local country bar and have draft Estrella and iberico jamon toasted bread. Then head to my accommodation, unpack and then to the beach for a swim and long lazy lunch with friends. Maybe head to Mambo for sunset or Benirras, return home,  play some music, freshen up then head out to another restaurant. Take a walk in Ibiza Town, visit the Rock bar then head off to a party or club and dance until sunrise. Go home, make love, chill, wind down and then cancel the flight home so I can stay longer.

A DJ that has surprised you with their cooking skills…what did they cook?

David Morales one afternoon in Ibiza a few years ago with his crab with chilli cherry tomato pasta. A delicious meal  accompanied by two bottles of Vega Sicillia whilst talking shop and listening to new music productions

Gazpacho. I’m obsessed/in love with this glorious cold tomato soup, a simple refreshing dish that’s all about perfect balance of ingredients seasoning…this is my favourite dish above all else

My favourite restaurant on the island…

So many great restaurants in Ibiza and have had so many memorable meals, my faves are Amanti beach club and the sadly departed Sands with Tim Payne cooking. Along with the classics for many years at Es Torrent and Ama Lur

Ox Tongue – won’t be trying it again, I found it most unpalatable. My wife Ilona who is a former veggie for 15 years ate the dish recently and suggested I try it. Yuk!

A perfect breakfast…

I seldom eat breakfast, usually it’s a banana, small Kit Kat chocolate bar and a cup of hot water with fresh squeezed lemon or green tea

Who taught you to cook?

I cooked for my mother most mornings as a kid to help out with being part of a family of four children. And in more recent years, the ex Marco Pierre White Head Chef and good friend of mine Tim Payne who is now cooking in Ibiza has taught me a great deal. As has Robert Reid – Head Chef at Balthazar

My favourite restaurant in London is…

Pollen Street Social with Jason Atherton. The dining room’s atmosphere emanates informal elegance, sexiness and Jason often cooks in his own flagship kitchen. I also produced the music for the restaurant

Your guilty pleasure food. You know you shouldn’t but you always do…

Pom Bear children’s potato chip snacks that my son Claudio got me hooked on them. Also chocolate and more chocolates which doesn’t please my wife Ilona with my chocolate weight gain

Truffled beans on toasted Sour Dough bread and Gazpacho with crab timbale

Your favourite restaurant in North America and Asia?

New York City – Pure Food and Wine…organic raw food cuisine, simply an amazing restaurant and creativity with raw food ingredients. Asia – 22 Ships in Hong Kong with it’s funky tapas style menu and The Mango Tree Thai restaurant in Bangkok

If you could have a master-class with a celebrity chef, who’d you pick and why?

Tom Kerridge, Jason Atherton, Paul Ainsworth, Monica Galleti, Michelle Roux, Marcus Waring – great British chefs who create great dishes and make the craft look so straightforward. Also the creative genius of Andoni Aduriz of Mugaritz in San Sebastian, Spain

The dish you have yet to master…

Most desserts. I don’t have the patience measuring/weighing ingredients, chilling and baking…although keen to learn more (note to myself)
