Your perfect breakfast would be…

After 10 hours at sleep at the Hotel Maricel in Mallorca, then sitting outside having their amazing breakfast whilst overlooking the beautiful Med.

Who taught you to cook?

Self taught. I started very late. Better late than never.

Your favourite 2 restaurants in your home of Mallorca…

Paxti – Best Steak in Mallorca hands down. Their Chuleton is to die for!

chaflan-de-patxi

Ca’n Pedro – A classic Mallorcan restaurant. Timeless and always good!

5 other restaurants from around the world you love…

Sumaq – An incredible Peruvian restaurant as good as the best ones in Lima!

Sushi Katsu, Yokohama, Japan – Without a doubt my favorite restaurant in the world. It’s run by a mum and son and seats around 8 people only. There is no menu and you get served whatever the Ohashi San (The Chef) bought earlier that morning at the fish market.

Tordesilhas , Sao Paolo, Brazil – Traditional Brazilian dishes cooked to perfection with a modern twist. Awesome selection of cachacas as well!

Pacomeralgo, Barcelona, Spain – Best tapas restaurant I know anywhere in Spain. Been going there for many years and the consistency is incredible.

Prinsen, Stockholm, Sweden – Classic Swedish food made to perfection. I always go there when I visit Stockholm to get my fix.

Carne, Cape Town, South Africa – I was blown away by the meat at this modern steakhouse in South Africa. Great wine selection as well. A must!

A DJ or musician that has surprised you with their cooking skills…what did they cook

Marco Carola cooked an amazing pasta “Genovese” a while back when I was at his place. Takes a long time to prepare and he made a fantastic dish!

If you could have a master-class with a celebrity chef, who’d you pick and why?

Probably with Ohashi San from Sushi Katsu. He has perfected minimal cooking and lets the flavors of the original ingredients shine rather than using many sauces etc.

Dead or alive – 3 famous people you would invite around for dinner…

Richard Pryor, Freddie Mercury and Bill Gates.

A dish you have yet to master…

Mexican Mole…and probably never well! Haha!

Not a fan of toppings, I prefer a classic Margarita.

Your biggest ever food cock up

Overcooking steaks.

A dish you just cannot stomach

Liver.

You get in from the club pissed, dive in the fridge and usually come out with…?

As boring as it sounds……water!

The most expensive meal you have ever had?

Le Meurice, Pairs. Though I have had many other fantastic meals for less than half the price. I honestly tend to try to avoid the obvious expensive places.

The most disgusting thing you have ever eaten at a festival

Very rare to get good food at festivals. But in general the UK festivals serve pretty rubbish food to their attendants.

The last time you used a cook book for a meal…

I have a bunch but never use them…I really should start!

Ibiza…

My favourite restaurants on the island…

Ibiza has many great restaurants.  I recently went to Mantouk Steakhouse. It not really a typical Ibiza experience, but the quality really impressed me.

The best sunset spot for a cold drink…

A private mansion with not many people and unobstructed ocean views.

A record that always reminds you of Ibiza

Sueno Latino!

Your favourite Ibiza dish

Hierbas!

The perfect 24 hours in Ibiza would be…

Arriving rested, going for a dip in the sea, having a great dinner with friends, then a fantastic gig…and then my 20min flight home to Mallorca.
