Avision

A track you love to hear on a sunny morning…

It’s so hard for me to pick one but here ya go!

Allen Stone – anything on the Radius album! Or some Teddy Pendergrass – When Somebody Loves You Back.

Your perfect breakfast would be…

Hmm…Lemon Ricotta Pancakes tends to do the trick.

The most unusual thing I have ever eaten…I think rabbit has been the most unusual thing I have had.

The dish that reminds me of my childhood…

Spaghetti, I always remember my parents or grandparents cutting it for me so I could eat it, when I was a child. The good old days!

Who taught you to cook?

I taught myself for the most part, but watching my mom over the years has always helped. I used to work at a deli as a young teenager, and that also helped me with learning how to make classic Sicilian Italian dishes.

Your favourite 3 restaurants in your home city New York City

Scarpetta – For me it is one of the best spaghetti pomodoro I have ever had!

Roberta’s /Blanca – Some of the best wood fired pizza. Along with one the best restaurants I have ever eaten at. Everything on the menu is ridiculous.

No photo description available.

Flor De Mayo – classic Nyc spot, nothing fancy but everyone knows everyone in this spot! This Peruvian/Chinese menu is off the charts! I recommend the Yuka balls to start, thank me later.

A DJ or musician that has surprised you with their cooking skills at home/their home…what did they cook

I actually have never had a cooked meal from a DJ/ Musician yet, but this year isn’t over yet, so I’ll keep you posted. Typically, when I’m with another DJ we usually go out to eat aha!

Your guilty pleasure food. You know you shouldn’t but you always do…

L&B pizza in Brooklyn. Anytime I’m in the area I stop and get a pie.

What is your signature dish?

Aha I’m not going to lie, my specialty is Neapolitan style pizza. I have a wood fired oven in my backyard, and sometimes nothing better than a Sunday off and some pizza. One particular pizza I have mastered is a Sicilian specialty called “Sficione” – it’s a traditional Sicilian square pie with Sicilian breadcrumbs, sautéed onion, anchovies , caciocavllo cheese, and it’s the bomb!

If you could have a master-class with a celebrity chef, who’d you pick and why?

Scott Conant, he’s just my type chef! Very simple, all about fresh ingredients, although his simplicity is what makes him such a great chef.

Dead or alive – 3 famous people you would invite around for dinner…

Derek Jeter – because he’s my childhood hero and I am huge Yankee fan.

Quincy Jones – to talk music and pick his brain. Probably the greatest producer of all time.

Michael Jackson- the greatest of all time, no explanation needed.

A dish you have yet to master…

Fresh Ricotta, it’s so simple but yet so easy to mess up!

Your favourite pizza topping

Hot Sopressata.

Your biggest ever food mistake

The Arancini I just ordered from this cafe in Rome, it had zucchini flowers in it and sardines. The waiter forgot to tell me the sardines were in it and I almost threw up.

A dish you just cannot eat

I think anything alive.

You get in from the club pissed, dive in the fridge and usually come out with…?

Probably a chicken cutlet, my mom always has left over chicken cutlets LOL.

The most expensive meal you have ever had?

I think one time at Nobu NYC my friends and I ran a tab for about 600+ a guy.

A record that always reminds you of Ibiza

Good Life – Inner City

Your favourite Ibiza dish-

Jamon Iberico and grilled squid.

The perfect 24 hours in Ibiza would be..

To hit all the above plus Carl Cox. There’s just something about that guy killing it wherever he is on the island.

Avison’s remix of Maxinne’s ‘Dusk Till Dawn’ on Knee Deep In Sound is out now…https://www.beatport.com/release/dusk-till-dawn/2643741
